Eggplant Salad

Ingredients
- 4 medium eggplants
- 1 egg yolk
- Juice of half a lemon
- 50 g olive oil
- 4 cloves of garlic
- 1 dessert spoon sugaar
- Salt
- A few olives to garnish
Preparation
Cook the eggplants until they are soft. Peel the skins with the help of a small knife by holding the stems, chop them finely, put them in a deep bowl, pour lemon juice, egg yolk olive oil and garlic into the eggplant you have prepared in a sauce pan. Add salt and sugar and mix for 2-3 minutes. Serve cold.
If desired, very finely chopped green pepper, tomato and parsley can be added to this mixture.
