Lentil Salad and Fried Tortilla

Ingredients
For the lentil salad:
- 1 yellow pepper
- 1 red pepper
- 1 medium red onion
- 1 parsley
- 1 tomato
- 200 g green lentils
- 1 tortilla
For Sherry Vinegar:
- 1 tablespoon of sherry vinegar
- 6 tablespoon of olive oil
- 1 tablespoon dijon mustard
- Freshly ground black pepperr
- Salt
Preparation
Cut the peppers into pieces the size of boiled lentils, after removing the seeds and cleaning the veined parts. Chop the tomato and red onion to the same size. Boil the lentils until they are not too soft but edible. Filter well. Roughly chop the parsley. To prepare the vinaigrette, mix the vinegar, olive oil and mustard in a bowl with a whisk. Add other ingredients and mix carefully. Place the lentil and vegetable mixture you have prepared in the molds, if you leave the lentils in the molds for a while, you will ensure that the ingredients settle a little.
