Barbunya Pilaki with Olive Oil

Ingredients
- 500 grams of fresh kidney beans
- Half a glass of olive oil
- 1 onion
- 1 potato
- 1 carrot
- 1 tablespoon of tomato paste
- 1 teaspoon sugar
- 1 tomato
- 2-3 cloves of garlic
- Salt
Preparation
Put the beans in a pot and add enough water to cover them, boil for 10 minutes and then drain. Chop the onions and cook them with half a cup of water. After the onions soften, add olive oil. Then add tomato paste, diced potatoes, finely chopped carrots and garlic. After cooking in the oil, add sugar, salt and 1 cup boiling water and cook for another 10 minutes. Finally add the beans. Check the water and add a little more if necessary. After your dish is cooked, remove it from the stove and serve it after it cools down.
