Eggplant Rice

Ingredients
- 300 g rice
- 1 medium sized onion, finely chopped
- 1 large eggplant, diced small
- 1 small diced large tomato
- 1 dessert spoon sugar
- 1 teaspoon of black pepper
- Salt
- 100 g olive oil
- 400 g hot water
Preparation
Soak the rice in warm water for 30 minutes, then wash it and put it in a strainer. Heat the olive oil in the pan, add the onion and fry until soft. Add the eggplants and fry for another 5 minutes and add the rice. After frying for 5 more minutes with the rice, repeat the same process for the tomatoes. Then add salt, sugar, black pepper and hot water, cook with the lid closed until the rice absorbs its water. Serve hot.
